Why have a Food Safety Plan?
In 1996, an alternative was introduced to the way food businesses
complied with the 1974 Food Hygiene Regulations. This alternative
meant that premises now had the option of developing and implementing
their own Food Safety Programme and therefore making them
exempt from the requirements of the 1974 Food Hygiene Regulations.
This means premises with an approved FSP are not required
to be registered or inspected by local council and are instead
audited by an approved NZFSA auditor (at pre-determined intervals.)
Food Safety Programmes in New Zealand are based on Hazard
Analysis Critical Control Point System (HACCP) and this system
is based on documenting food production processes. This documentation
includes identifying potential hazards in the food manufacturing
process and minimizing/preventing those hazards, establishing
parameters of crucial steps in the manufacturing process,
monitoring those parameters, and documented corrective actions
to follow if those parameters are exceeded.
Once your FSP is up and running, you know that if food is
produced according to your approved FSP, then you can say
with some confidence that your product will be free of harmful
contaminates and therefore safe to consume.
Most supermarkets will also require that you have an approved
FSP before they will allow your products to be sold by them.
